2025 HONEY DESCRIPTIONS


FROM OUR CENTREVILLE APIARY

Extraction #1 - 4/27/25:   STOCK RUNNING LOW   Golden in color, this early season honey delights with its distinct floral aroma and taste.  Its sweetness is subtle, making it perfect for drizzling over toast or adding to tea.  Beyond its culinary appeal, this honey is known for its potential allergy-fighting properties, offering a natural remedy for seasonal allergies (especially those beginning toward the end of March and into April in the northern Virginia area).

Extraction #2 - 5/7/25:  OUT OF STOCK   Golden in color, this early season honey (similar to Extraction #1) delights with its light floral aroma and delicate taste.  What sets this apart from Extraction #1 is the slight "buttery-ness" mouthfeel.  Beyond its culinary appeal, this honey is known for its potential allergy-fighting properties, offering a natural remedy for seasonal allergies (especially those beginning toward the end of March and into April in the northern Virginia area).

Extraction #3 - 5/12/25:  STOCK RUNNING LOW   Lightly golden in color, it boasts the taste of that serene jasmine garden.  With each taste, your palate is greeted by the sweet, floral notes of jasmine blossoms dancing harmoniously with the rich, golden essence of honey.  This unique honey creates a sensory experience that is both soothing and exhilarating, leaving a lingering, fragrant finish that captures the essence of nature's beauty in every drop.

Extraction #4 - 5/20/25:  Golden in color, this Autumn Olive honey is sweet, sweet, sweetAutumn Olive honey is a unique honey with a subtle, flowery taste reminiscent of the autumn olive blossom. It's produced from the early spring blooms of the autumn olive bush, which provides a crucial food source for honeybees during a time when other nectar sources are scarce. The honey has a sweet-tart flavor, sometimes described as a blend of apple, pomegranate, and cranberry.

Extraction #5 - 6/13/25:  Amber in color, it has a pleasing wildflower taste with a hint of mint, especially in the aftertaste.  We have found this honey to be very versitile, but especially wonderful in tea (both hot and iced).

Extraction #6 - 6/20/25:  Another great one!!!  This dark amber honey is well grounded; it has a very slight earthy flavor with a hint of floral afternotes.  Although sweet, its sweetness is not overbearing, making it a nice compliment on fresh fruit.  Many have already said this honey is, "pleasant-tasting".

Extraction #7 - 7/4/25:  This very dark honey has a hint of extraction #6's characteristics, but is much thicker and has a stronger, almost tangy toneWe have had a lot of people calling it "savory".  It is a must-have for our friends who truly enjoy earthy honey!  Several of our friends from the Middle-East (Saudi, Yemen...) have said that this extraction is very similar to the honey they get back home.


FROM OUR PURCELLVILLE APIARY

Extraction P-1 (Catoctin Beach Farm, Purcellville apiary) - 5/6/25:  This honey is light in color and probably one of the best ones to use in expensive tea.  It has a light floral flavor that won't disrupt the flavor of whatever it is used with.

Extraction P-2 (Catoctin Beach Farm, Purcellville apiary) - 5/6/25:   OUT OF STOCK   This honey is slightly darker in color and has a similar taste to Extraction P-1, but with a bolder, deeper flavor.  This was a very small extraction and therefore not much is available.

Extraction P-3 (Catoctin Beach Farm, Purcellville apiary) - 5/25/25:  OUT OF STOCK   This honey is darker in color and has a bold flavor with a slight caramel taste.

Extraction P-4 (Catoctin Beach Farm, Purcellville apiary) - 6/2/25:  This honey is amber in color and has a similar taste to Extraction #5, but with a bolder, deeper flavor and with the mint missing.  This was a very small extraction and therefore not much is available.

Extraction P-5 (Catoctin Beach Farm, Purcellville apiary) - 6/21/25:  This slightly tangy, nutty-like honey has a bittersweet butterscotch-like richness with a faint peach aftertaste.
